Toooobing etc.

We are so sorry that we have been so bad about posting these past few months. It only goes to show how unbelievably busy we are. Now that I am managing my own building (in addition to everything else I was doing at work) , “down time” is almost non-existent. Eric’s job is also keeping him very busy- they are steadily growing, which means he is even playing less ping-pong, if you can believe it.

You’d think by the time we got home we would be able to “chill out,” but between going out with the Parkers and doing home-improvement type stuff, we rarely have a moment to sit down and fill you all in on what’s going on. Bad Ellie and Eric!!!

So, eventhough I have a huge pile of stuff to do sitting on my desk, I am going to spend a few minutes filling you all in (don’t you feel loved?!) So let’s see…..On Friday night we went to a Pinback concert and ate dinner at a place called Moonshine. It is a pretty nice restaurant that serves cowboy food (mac and cheese, corn-dog shrimp etc. ) It was very yummy and the concert was really fun, even though it was REALLY hot and sticky. Then, let’s see, what did we do on Saturday…..oh yea, TOOBING!!! Two weekends in a row we have done a Texas summer staple- toobing. Picture this: floating down a tree-lined river in an innertube with all your friends, drinking beer, munching on cowboy burritos (a yummy Parker concoction), talking, laughing, trying to stand on your tube, getting dunked by a sneak attack…..sounds pretty fun, huh? Well, it is! That’s why we did it two weekends in a row!! (Crazy weird “we’re not in California anymore” moment, though- at the end of the toobing a bus picks you up and takes you back to the parking lot. On the ride back the bus driver plays the most country of all country music I have ever heard and EVERYONE sings along!!! Eric and I have been told that it is just a matter of time before we know all the words too, but honestly I didn’t feel like we were in Texas until that moment. So far it seems like Austin so rarely fulfills any Texas stereotypes, but we were definitely feeling it during that bus ride!!!)

So that was Saturday. On Sunday, Eric and I shopped around for some bookcases for our living room, but didn’t find the perfect ones. For dinner we made a portuguese pork recipe from a cookbook Eric’s mom sent us and it was fabulous! All in all it was a pretty relaxing day.

On Monday, we had some people over for a Memorial Day BBQ which turned out to be really fun, eventhough it started raining almost immediately after people got to our house.

Today it’s back to work- four days this week and then three days next week and then we head back to California for Eric’s cousin Robert’s wedding. I can’t wait, my first “Portuguese” wedding.

Let’s see, what else. OH!!! Sarah and Jason had their 20 weeks ultra sound last week and the doctors are quite sure that it is a girl!!!! Yippeee, another niece!!!! I can’t wait! AND, I have been told that they are pretty sure that they want to move here, so double yippeeee!!!!!

Well my wonderful family and friends, I have procrastinated enough so I must get back to work. I love you all and hope to talk to ya’ll soon!!!
